とはいえ、”My job is as a teacher."という表現もあまり見かけません。(用例がないわけではありませんし、jobとasを使った"get a job as a teacher"という表現もあります。)
"My background and day job is as a statistician."の場合、backgroundについては"I have a background as a statistician"という言い換えができます。backgroundとasも相性がよさそうです。引用文ではjobだけでなくbackgroundも主語の一部になっているので許容度が上がっているのかもしれません。

この例文では、「as ＋名詞句」は「まるで〜かのようだ」と例える役割をしています。つまり、前置詞の"like"のような役割(直喩)をしているということです。
「ゴルバチョフが権力の座にあった最後の一年、彼は悪夢に苛まれた男のようであった」、つまり「ゴルバチョフが権力の座にあった最後の一年、彼は悪夢に苛まれた男のように過ごしていた」という意味になります。
